Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • 2 cups cream cheese softened
  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a bowl, combine graham cracker crumbs and melted butter.
  • Press the mixture into the bottom of a greased 9x13 inch baking dish.
  • Bake crust for 10 minutes, then remove from oven.
  • In a large mixing bowl, beat the cream cheese until smooth.
  • Add pumpkin puree, granulated sugar, and brown sugar; mix well.
  • Incorporate eggs one at a time, mixing thoroughly after each addition.
  • Stir in vanilla extract, cinnamon, nutmeg, and ginger until combined.
  • Pour the pumpkin mixture over the pre-baked crust.
  • Bake for an additional 35-40 minutes until the center is set.
