Ingredients
  

  • 200 g digestive biscuits
  • 100 g unsalted butter melted
  • 600 g cream cheese
  • 150 g granulated sugar
  • 200 ml sour cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • Fresh berries for topping optional

Instructions
 

  • Preheat your oven to 160°C (320°F).
  • Crush the digestive biscuits until fine crumbs.
  • Mix the biscuit crumbs with melted butter until combined.
  • Press the mixture into the bottom of a springform pan to form the crust.
  • In a bowl, beat the cream cheese until smooth.
  • Add sugar, sour cream, vanilla extract, and mix until well combined.
  • Add eggs one at a time, mixing gently after each addition.
  • Pour the cheesecake mixture over the crust in the pan.
  • Bake in the preheated oven for 60 minutes until the center is set.
  • Cool the cheesecake completely before refrigerating for at least 4 hours.
