- 200 g digestive biscuits
- 100 g unsalted butter melted
- 600 g cream cheese
- 150 g granulated sugar
- 200 ml sour cream
- 3 large eggs
- 1 tsp vanilla extract
- Fresh berries for topping optional
Preheat your oven to 160°C (320°F).
Crush the digestive biscuits until fine crumbs.
Mix the biscuit crumbs with melted butter until combined.
Press the mixture into the bottom of a springform pan to form the crust.
In a bowl, beat the cream cheese until smooth.
Add sugar, sour cream, vanilla extract, and mix until well combined.
Add eggs one at a time, mixing gently after each addition.
Pour the cheesecake mixture over the crust in the pan.
Bake in the preheated oven for 60 minutes until the center is set.
Cool the cheesecake completely before refrigerating for at least 4 hours.
