Ingredients
  

  • 1 pound fresh calamari cleaned and sliced into rings
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup buttermilk
  • Vegetable oil for frying
  • Lemon wedges for serving
  • Fresh parsley chopped for garnish

Instructions
 

  • Start by cleaning the calamari, removing any skin and innards.
  • Slice the calamari into rings, about 1/2 inch thick.
  • In a bowl, whisk together the buttermilk, salt, and pepper.
  • Soak the calamari rings in the buttermilk mixture for at least 10 minutes.
  • In a separate bowl, mix the flour and paprika.
  • Heat vegetable oil in a deep skillet over medium-high heat.
  • Remove calamari from buttermilk and dredge in the flour mixture, shaking off excess.
  • Carefully place the calamari in the hot oil, frying in batches.
  • Fry for about 2-3 minutes, or until golden brown.
  • Remove with a slotted spoon and drain on paper towels.
