Ingredients
  

  • 2 large flour tortillas
  • 1 cup cooked rice
  • 1 cup black beans drained and rinsed
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 1 cup diced tomatoes
  • 1/2 cup corn
  • 1/4 cup chopped cilantro
  • 1 avocado sliced
  • 1 lime juiced
  • Salt and pepper to taste

Instructions
 

  • Heat the tortillas in a dry skillet over medium heat for 30 seconds on each side.
  • In a bowl, mix the cooked rice, black beans, diced tomatoes, corn, and cilantro.
  • Add lime juice, salt, and pepper to the mixture. Stir well.
  • Place a tortilla on a flat surface and add half of the rice mixture in the center.
  • Top with shredded cheese and avocado slices.
  • Fold the sides of the tortilla over the filling.
  • Roll the tortilla from the bottom up to encase the filling.
  • Repeat with the second tortilla.
  • Place burritos seam-side down in the skillet.
  • Cook for 2-3 minutes on each side until golden brown and the cheese is melted.
